Well, the days are getting just the tiniest bit cooler, and I'm already in autumn mode when it comes to lunch. I've been on a spinach salad kick lately. :)
My current recipe includes baby spinach leaves, half of a thinly sliced Fuji apple, and honey baked pecans. I dress it with a honey mustard creamy yogurt dressing and some drizzled honey.
Are you sensing a honey theme here? lol All that sweetness might be better balanced with some crumbled goat cheese... I'll have to try that next time. ;)
Anyway, it is seriously yummy. Try it!

I have a bowl that matches that plate perfectly, honey. Salads have always been my favorite thing to eat. I also put spinach in our salad and use pecans for their sweetness. Yum!!!!

Your salad looked delicious Mary. I eat lots of them myself and like to start with mixed baby greens, add a sliced hard boiled egg on top for protein, carrots, tomato, beets and sunflower seeds. Store bought dressings are nice for a treat but olive oil and white balsamic vinegar are my favourite dressing.

Your salad looks absolutely yummy!! I am not a breakfast person {I know...I'm bad}, so sometimes it's eggs and other times soup and salad. I love spinach salad with pears and goat cheese and sometimes as a wilted salad with bacon bits.
