I had minestrone for breakfast this morning.
It could be worse, right? I mean, there have been times when I've had a handful of chocolate covered craisins for breakfast, or a slice of cold pizza, or a handful of last night's popcorn, so minestrone is actually a good choice, right?
After all, I did resolve to eat more vegetables in 2011.
I made the minestrone for dinner last night. I cut a recipe out of a magazine years ago, and I've made it so often that I don't even follow the recipe any more. So I can't really share a recipe with you, except to say that it starts with onions, carrots and celery, salt and pepper, sauteed in some olive oil.
I add a small can of tomato paste and some chicken stock to deglaze the pot.
(Can I tell you a blogging secret? When I took the picture of the stock being poured into the pot, I had my eye to the camera viewfinder and sort of missed the pot. All that steam is the stock hitting the stove's burner. lol)
I add some red kidney beans and zucchini. Then I just let it simmer till it thickens. I serve it with pasta elbows, which I cook separately so that they do not get too soft.
So that's about it. Minestrone for dinner. And breakfast. :)
Beautiful pictures!!!

I think that would be good. Taste good and good for you. You have some great macro shots, which I am trying to learn right now. Hope you didn't get burn. Blessings Mary.

Sounds warm and yummy to me! I love the effect of the steam and the story behind it! I would make a terrible food blogger - things would be burnt, including me! :)
ReplyDeletethat sounds delish - do you put herbs in it too?
ReplyDeleteLooks yummy! And there's nothing wrong with eating dinner for breakfast! :)
ReplyDelete(I love your stock pouring photo story too!)
Char -- no herbs, although I did include some of the celery leaves... :)
ReplyDeleteIf you merely carried on with all that stock hitting the burner, you're a pro. What a terrific shot. Yes, goodness yes, an excellent breakfast minestrone.
ReplyDeleteI'm with you, Mary. It's a year of good health, all around. Good luck and hugs, Deb=^..^=x5
ReplyDeleteYUM Mary.....that looks delish
ReplyDeleteMe, I had the slice of pizza this morning...LOL Hubby is away on business so last night I had pizza.....love cold pizza.....
Have a wonderful day....
Kathy :)
Sounds and looks yummy and healthy. I am not a breakfast person, so if I do eat something in the morning it could be just about anything. This morning 2 strawberry bars and coffee - better than nothing I guess.:D
ReplyDeleteHave a great day.
Glenda
Wonderful shots! I especially love the broth pouring into the pot...and the story that goes with it:) So worth a dirty stove:) Recipe sounds delicious!
ReplyDeleteA very healthy choice Mary. Hits all the basics!
ReplyDeleteSounds yummy to me! I've definitely eaten my share of strange things for breakfast...lunch and dinner too! In fact, I ate a chicken spaghetti dish around 10:30 this morning as I'd skipped breakfast. My hubbby has just ventured into the restaurant business and we were just discussing a good Minestrone soup.
ReplyDeleteI cracked up, and still am, seeing all that steam hitting the burner. I can so see myself doing that!
Nancy
Great photo trick in that one picture with the steam...lol. Thanks for sharing the secret. This looks yummy!
ReplyDeleteLOL!! You tickle me so. Your burner story reminded me of two days ago when I turned the burner on underneath my stainless steel cover. And I thought my husband was the only one to do that.....LOL Lucky for me, he could buff out the scorch and my cover is as good as new. Minestrone for breakfast? Awesome! Kit
ReplyDeleteI could see eating Minestrone for breakfast. I eat whatever I feel like at the time, breakfast, lunch or dinner :) It keeps life exciting, right. What a great trick to get steam, LOL :)
ReplyDeleteSounds like a nice breakfast to me! Carla
ReplyDeleteI think it sounds perfectly delicious! Don't the love recipes that have become so familiar they have actually become your own?
ReplyDeleteAnd I thought I was the only one who ate cold pizza for breakfast!!
ReplyDeleteNone the less, the picture of pouring the stock is fantastic, as is the celery ends! (needing to be trimmed, I assume.) :-)
ReplyDeleteOh, Yummy! That is how I love soup too!
ReplyDeleteYvonne

Hi Mary
ReplyDeleteSoup for breakie sounds fine by me. I've seen a number of bloggers making minestrone soup, must be a national comfort food. :-)
Stunning photos! Made me yearn for a bowl of minestrone...for breakfast, or otherwise. And I laughed aloud at the stock/steam picture's explanation. Sounds like something I'd do.
